Mom’s Sweet ‘n Sour Pork Recipe


What you need
2 lbs. pork cut into 1″ cubes
1 can pineapple chunks
1/4 cup soy sauce
5 Tbsp. corn starch
2 cloves garlic
1 medium onion – cut into pieces
1 medium bell pepper – cut into 1″ strips
10 baby carrots – cut into coins
1/4 cup oil
1/2 cup catsup
2/3 cup sugar
1/4 cup white vinegar
2/3 cup water

Drain pineapple – reserve 5 Tbsp. juice, Combine 2 Tbsp pineapple juice, 2 Tbsp corn starch, 2 Tbsp soy sauce – stir till smooth. Put cut up pork in mixture an let set 10-15 min. Stir-fry onion, pepper, in 2 Tbsp oil in large pan. Add carrots – cook about 2 min. Remove from skillet. Drain mixture from pork. Stir-fry pork in 2 Tbsp oil till brown. Pour off excess oil! Add vegetables.

In bowl combine:
3 Tbsp pineapple juice
2 Tbsp soy sauce
3 Tbsp corn starch
sugar, catsup, vinegar & water stir till smooth

Add to pork mixture – stir constantly until mixture comes to a boil and gets thick. Add pineapple cook 1 minute more stirring constantly.

Serve over rice (about 4 cups)
